Apple Brownies

Ingredients

  • 115g Self raising flour
  • 30ml melted butter
  • 1 egg
  • 1tsp vanilla essence
  • 175g soft brown sugar
  • 85g chopped dates
  • 55g walnuts or hazelnuts (chopped)
  • 450g unpeeled cooking apples (washed, cored and cut into small cubes)

Method

Sift flour into a bowl and add the melted butter, egg and vanilla. Stir gently, you want this to be light.

Add the apples, sugar, dates and walnuts. Mix until everything is incorporated into the batter.

Grease and line a square baking tray or 20cm cake tin. Spread the mixture evenly and bake at 200C / GM6 or 400F for about 50 minutes until risen and baked through.

Serve warm with ice cream and, if liked, a dusting of cinnamon.
