No Cook Apple Pickle
But you do need a food processor!
Ingredients
- 700g cooking apples (Bramleys are ideal, peeled and cored)
- 450g stoned dates
- 450g red onions (peeled)
- 450g soft brown sugar
- 550ml malt vinegar
- 1 tsp salt
- 1/4 tsp cayenne pepper
- 1/2 tsp ground cloves
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon

Method
Process the onions, apples and dates in your mixer until finely chopped but don’t let it become a mush.
Mix your dried fruit, sugar, salt and spices together in a large bowl. Add the chopped fruits and onions into the bowl and mix well. Add the vinegar. Cover the bowl with a cloth and leave to sit for 24 hours.
After, then stir once more and pack into warm sterilised jars – this makes about 6 x 380ml (1 lb) jars. Make sure you pack the fruit mix in well, leaving no gaps and fill the jars to the top. Seal, label and put away in a dark cool cupboard for 2 months before eating.
Will last a year unopened. But refrigerate and use within 3 weeks once open.
