Apple Slaw

All green apples welcome!

Ingredients

  • 4 sharp apples (granny smiths or any green apples work best)
  • 2 large carrots
  • 1 small red onion
  • 1/2 a cabbage- red or white
  • Zest and juice of 1 lemon
  • 1 tbsp vinegar
  • 6 tbsp mayonnaise
  • 6 tbsp plain yoghurt
  • 1 tsp mustard
  • 1 tsp honey
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 2 tbsp finely chopped green herbs (parsley, coriander, dill, chives or tarragon)

Method

Wash the apples, then grate, skins and all into a large bowl. Add lemon juice and salt.

Chop or slice your red onion as finely as you can and add to the apple and lemon. Mix well.

Remove core from the half cabbage and slice thinly. Grate the carrots. Add to the bowl of apples and onions.

In a separate bowl combine lemon zest, vinegar, mayonnaise, yogurt, mustard, honey and black pepper. You can also grate in 1 clove of garlic if liked. Give the dressing a really good mix and pour over the vegetables, making sure it coats everything. Cover and set aside for ½ hour at room temperature.

Before serving add chopped green herb of your choice.
You can also add sliced almonds or walnuts.
