German Apple Cake
Ingredients
- 2 eating apples (peeled and sliced into thin wedges)
- 1 tbsp lemon juice
- 125g butter
- 140g caster sugar
- 3 eggs
- 225g plain flour
- 2 tsp baking powder
- ½ tsp salt
- 5 tbsp milk
- 1 ½ tbsp demerara sugar
- ½ tsp cinnamon or ginger

Method
Preheat oven to 170C / GM3 Butter and line a 23cm round cake tin.
Toss apple wedges in the lemon juice.
Mix together butter & sugar until pale and fluffy. Add the eggs, flour and baking powder. Add salt
and slowly add milk to create a soft batter.
Pour batter into cake tin and smooth the top. Place the apple slices in a spiral pattern over the batter.
Mix together the demerara sugar and spice of choice, then sprinkle over the top.
Bake for 45 minutes – check with a skewer, if it comes out clean, remove to cool in the tin for 15 minutes. If not, bake a little longer.
Serve warm with cream.
