Savoury Apple Tart

Serves two.

Ingredients

  • A sheet of ready-made puff pastry
  • 1 leek (cleaned and sliced, or 1 medium onion peeled and sliced)
  • 1 tbsp butter
  • 3 fresh sprigs of thyme
  • Salt and pepper
  • 150g cheddar or other cheese (grated)
  • 2 apples (sliced thinly)

Method

Preheat oven to 425F / GM7 / 220C.

Line a rectangular baking tray with baking parchment and unroll the puff pastry onto it. Make a border round the edges of the pastry by folding over the edges, using a fork to press it down. Then prick the base of the pastry with the fork and set aside.

Melt butter and cook the leek or onion slices with a pinch of salt and pepper and thyme sprigs. This will take at least 10 to 15 minutes to get to a nice tangle of golden softness. Remove the sprigs, if the leaves have fallen off, that’s fine.

Put ¾ of the grated cheese across the pastry. Then dot over the leeks/ onion and then layer over the apple sliced. Finish with the rest of the cheese.

Bake in the oven for 20 to 30 minutes until golden brown and crisp. Garnish with more thyme leaves and serve with a side salad.
