South Indian Apple Sabzi

Delicious side dish for two.

Ingredients

  • 1 ½ tbsp vegetable or coconut oil
  • 4 apples
  • 2 green chillies
  • ½ tsp fresh chopped ginger
  • 1 tsp lemon juice
  • 1 tsp brown sugar
  • ½ tsp cumin seeds
  • ½ tsp ground turmeric
  • ½ tsp ground chilli or cayenne
  • 1 tsp salt
  • 2 tbsp fresh coriander (chopped)

Method

Peel and chop the apples into cubes. Toss in lemon juice.

Slice the green chillies (remove seeds if you want it milder).

Heat oil in a wide shallow pan (with a lid) and then add the cumin. Cook till golden, then add chillies and turmeric.

Next add the apples, salt and 235mls of water. Mix well, cover and leave on a low heat until the apples are soft. Use a spoon or masher to crush some of the apples and add the chilli, ginger and sugar.

Cover and cook for another 3 to 4 minutes. Taste and add more lemon or salt or chilli as you like. Add fresh coriander and a nubbin of butter or coconut cream to enrichen.
Serve with flatbread.
